
Pumpkin spiced protein cupcakes

The perfect Autumnal cupcake recipe to have either as a pre workout meal or with custard for dessert, these pumpkin spiced protein cupcakes deliver the perfect combination of sweetness, warmth and nutrients all in one.

For the cake
- 1 can (425g) pumpkin puree
- 2 scoops Optimum Nutrition vanilla casein (you can use any flavour you fancy)
- 150g coconut flour
- 1 egg
- 200ml egg whites
- 200ml almond milk
- 1 tbsp peanut butter
- 1 tbsp maple syrup
- 2 tbsp sweetener
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp all spice
- 1 tsp ginger
For the filling
- Spread (I used Nutella, white chocolate spread, crunchy chocolate spread)
Instructions
- Mix together all the dry ingredients in a bowl
- Add all wet ingredients
- Add 1 dessert spoon of mixture in to cupcake silicon moulds
- Add 1/2 tsp of Nutella (or other chosen spread) on top of mixture
- Top the moulds with 2 tsp of cake mixture
