Pumpkin spiced protein cupcakes

The perfect Autumnal cupcake recipe to have either as a pre workout meal or with custard for dessert, these pumpkin spiced protein cupcakes deliver the perfect combination of sweetness, warmth and nutrients all in one.

For the cake
  1. 1 can (425g) pumpkin puree
  2. 2 scoops Optimum Nutrition vanilla casein (you can use any flavour you fancy)
  3. 150g coconut flour
  4. 1 egg
  5. 200ml egg whites
  6. 200ml almond milk
  7. 1 tbsp peanut butter
  8. 1 tbsp maple syrup
  9. 2 tbsp sweetener
  10. 1 tsp vanilla extract
  11. 1 tsp baking powder
  12. 2 tsp cinnamon
  13. 1 tsp nutmeg
  14. 1 tsp all spice
  15. 1 tsp ginger
For the filling
  1. Spread (I used Nutella, white chocolate spread, crunchy chocolate spread)
Instructions
  1. Mix together all the dry ingredients in a bowl
  2. Add all wet ingredients
  3. Add 1 dessert spoon of mixture in to cupcake silicon moulds
  4. Add 1/2 tsp of Nutella (or other chosen spread) on top of mixture
  5. Top the moulds with 2 tsp of cake mixture
